Description

Tender cod fillets marinated in a sweet and salty mixture of soy sauce, honey, and ginger, baked to perfection.


Ingredients

  • 4 cod fillets (6 oz each)
  • 2 tablespoons fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon toasted sesame seeds (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the soy sauce, honey, grated ginger, and lemon juice until well-combined.
  3. Place the cod fillets in a shallow dish and pour half the marinade over them. Let them marinate for 15-30 minutes.
  4. Arrange the marinated fillets on a greased baking sheet and brush them with the remaining marinade.
  5. Bake for 12-15 minutes or until the fish flakes easily with a fork.
  6. If you like, toast the sesame seeds in a skillet over medium heat until golden.
  7. Serve the cod garnished with chopped green onions and toasted sesame seeds.

Notes

Use freshly grated ginger for best flavor. Marinating overnight deepens the flavors. Don’t skip the sesame seeds!
