Description
Tender cod fillets marinated in a sweet and salty mixture of soy sauce, honey, and ginger, baked to perfection.
Ingredients
- 4 cod fillets (6 oz each)
- 2 tablespoons fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 2 green onions, chopped (for garnish)
- 1 tablespoon toasted sesame seeds (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together the soy sauce, honey, grated ginger, and lemon juice until well-combined.
- Place the cod fillets in a shallow dish and pour half the marinade over them. Let them marinate for 15-30 minutes.
- Arrange the marinated fillets on a greased baking sheet and brush them with the remaining marinade.
- Bake for 12-15 minutes or until the fish flakes easily with a fork.
- If you like, toast the sesame seeds in a skillet over medium heat until golden.
- Serve the cod garnished with chopped green onions and toasted sesame seeds.
Notes
Use freshly grated ginger for best flavor. Marinating overnight deepens the flavors. Don’t skip the sesame seeds!
