Description

Savory roast beef, melty provolone cheese, and crunchy French fried onions wrapped in warm tortillas for a delightful bite-sized treat.

Ingredients

  • 4 large flour tortillas (about 12 inches in diameter)
  • 8 slices provolone cheese, thinly sliced
  • 12 ounces deli roast beef, freshly sliced
  • 1 cup French fried onions, store-bought or homemade
  • 2 tablespoons extra virgin olive oil
  • 1 can (10.5 ounces) beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
  2. Place a tortilla flat on a clean surface and sprinkle 2 slices of provolone cheese over one half of the tortilla.
  3. Add approximately 3 ounces of freshly sliced roast beef on top, followed by a generous handful of French fried onions.
  4. Brush the inside edge of the tortilla lightly with olive oil.
  5. Carefully roll the tortilla from the filled end, ensuring the fillings are enclosed, and press the oiled edge to seal it.
  6. Place the rolled tortilla seam-side down on the prepared baking sheet and repeat with remaining tortillas.
  7. Lightly brush the tops and sides of each roll with remaining olive oil.
  8. Bake for 8–10 minutes, rotating the baking sheet halfway through, until golden brown and cheese is bubbling at the edges.
  9. While baking, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium, whisking to blend, and bring to a gentle simmer for about 3–4 minutes.
  10. After baking, let roll-ups rest for 2 minutes, then slice into halves or thirds for serving.
  11. Arrange slices on a platter and serve with warm au jus for dipping.

Notes

Warm tortillas slightly before filling for easier rolling. Don’t overfill to prevent spills during baking.
