Description
Savory roast beef, melty provolone cheese, and crunchy French fried onions wrapped in warm tortillas for a delightful bite-sized treat.
Ingredients
- 4 large flour tortillas (about 12 inches in diameter)
- 8 slices provolone cheese, thinly sliced
- 12 ounces deli roast beef, freshly sliced
- 1 cup French fried onions, store-bought or homemade
- 2 tablespoons extra virgin olive oil
- 1 can (10.5 ounces) beef consommé
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
- Place a tortilla flat on a clean surface and sprinkle 2 slices of provolone cheese over one half of the tortilla.
- Add approximately 3 ounces of freshly sliced roast beef on top, followed by a generous handful of French fried onions.
- Brush the inside edge of the tortilla lightly with olive oil.
- Carefully roll the tortilla from the filled end, ensuring the fillings are enclosed, and press the oiled edge to seal it.
- Place the rolled tortilla seam-side down on the prepared baking sheet and repeat with remaining tortillas.
- Lightly brush the tops and sides of each roll with remaining olive oil.
- Bake for 8–10 minutes, rotating the baking sheet halfway through, until golden brown and cheese is bubbling at the edges.
- While baking, combine the beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium, whisking to blend, and bring to a gentle simmer for about 3–4 minutes.
- After baking, let the roll-ups rest for 2 minutes, then slice into halves or thirds for serving.
- Arrange slices on a platter and serve with warm au jus for dipping.
Notes
Warm tortillas slightly before filling for easier rolling. Don’t overfill to prevent spills during baking.
