Description

A hearty and comforting shepherd’s pie casserole filled with ground beef, vegetables, and topped with creamy mashed potatoes.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the ground beef until it’s browned, then drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet, cooking until softened—about 3-4 minutes.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Let this mixture simmer for 5-7 minutes until it thickens slightly.
  5. Transfer the beef and vegetable mixture to a casserole dish, spreading it evenly.
  6. Top it off with your prepared mashed potatoes, making sure to cover the filling completely.
  7. Dot the mashed potatoes with butter and sprinkle with shredded cheddar cheese if desired.
  8. Bake in your preheated oven for about 20-30 minutes, or until the top is golden and bubbly.
  9. Allow to cool for 5 minutes before serving.

Notes

Feel free to substitute ground turkey for a lighter option or use fresh vegetables to suit your taste.
