Description

A quick and refreshing taco bowl made with shredded chicken, cottage cheese, sweet corn, black beans, juicy tomatoes, and avocado.


Ingredients

  • 1 cup cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup cottage cheese
  • 1 cup corn (fresh, frozen and thawed, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1 avocado, diced
  • 1 tsp taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. Place the shredded chicken in a large mixing bowl.
  2. Add the cottage cheese, corn, black beans, and diced tomatoes.
  3. Sprinkle the taco seasoning over the mixture. Add a pinch of salt and a few grinds of black pepper.
  4. Mix gently until everything is evenly incorporated. Taste and adjust seasoning.
  5. Serve the mixture into bowls. Top each bowl with diced avocado and a handful of chopped cilantro.
  6. Serve immediately with lime wedges on the side for squeezing.

Notes

For lower sodium, rinse canned beans thoroughly and choose low-sodium canned tomatoes.
