Ingredients
- 2 cups shredded chicken
- 1 cup cream cheese
- 1 cup cheddar cheese
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- 8 tortillas (flour or corn)
- Olive oil or cooking spray
- Guacamole or salsa (for dipping)
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, and spices. Mix until well blended.
- Warm your tortillas in a skillet or microwave until pliable.
- Spoon a couple of tablespoons of the chicken mixture onto each tortilla. Roll them tightly, ensuring the seam is down on a baking sheet.
- Lightly spray or brush the taquitos with olive oil.
- Bake in the preheated oven for about 15-20 minutes or until golden and crispy.
- Serve hot with guacamole or salsa for dipping.

Make ahead: Prepare the filling a day in advance. Freeze uncooked taquitos for longer storage.
