Description

A cozy and flavorful dish combining seasoned ground beef, black beans, corn, diced tomatoes, and cheddar cheese, slow-cooked to perfection.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • Tortilla chips (optional for layering)
  • Sour cream (for serving)
  • Chopped green onions (for garnish)


Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked, draining any excess fat.
  2. In your crockpot, layer the cooked beef, black beans, corn, diced tomatoes, and taco seasoning; stir until combined.
  3. Cook on low for 4-6 hours or on high for 2-3 hours.
  4. About 10 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
  5. Serve with optional tortilla chips, sour cream, and garnish with chopped green onions.
