A cozy, flavorful Taco Casserole made with seasoned ground beef, black beans, corn, and melted cheddar, perfect for busy weeknights.
Ingredients
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- Tortilla chips (optional for layering)
- Sour cream (for serving)
- Chopped green onions (for garnish)
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked. Be sure to drain any excess fat.
- In your crockpot, layer the cooked beef, black beans, corn, diced tomatoes, and taco seasoning. Stir until everything is combined.
- Cook on low for 240-360 minutes, or on high for 120-180 minutes, allowing those flavors to meld beautifully.
- About 10 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.
- Serve with optional tortilla chips, sour cream, and garnish with chopped green onions.
