Description

A cozy, flavorful Taco Casserole made with seasoned ground beef, black beans, corn, and melted cheddar, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • Tortilla chips (optional for layering)
  • Sour cream (for serving)
  • Chopped green onions (for garnish)


Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked. Be sure to drain any excess fat.
  2. In your crockpot, layer the cooked beef, black beans, corn, diced tomatoes, and taco seasoning. Stir until everything is combined.
  3. Cook on low for 240-360 minutes, or on high for 120-180 minutes, allowing those flavors to meld beautifully.
  4. About 10 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.
  5. Serve with optional tortilla chips, sour cream, and garnish with chopped green onions.
