A comforting soup that combines the flavors of traditional lasagna, perfect for chilly evenings or busy weeknights.
Ingredients
- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 oz lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- In a skillet, brown the ground meat with diced onion and minced garlic. Drain any excess fat.
- Transfer the mixture to a crockpot, adding diced tomatoes, tomato paste, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in broken lasagna noodles.
- Mix in the ricotta cheese until well blended throughout the soup.
- Right before serving, sprinkle mozzarella cheese on top and let it melt. Garnish with fresh basil if desired.
Notes
For a vegetarian version, omit the meat and add more vegetables. For a thicker soup, reduce the broth.
