Description

A comforting soup that combines the flavors of traditional lasagna, perfect for chilly evenings or busy weeknights.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish (optional)


Instructions

  1. In a skillet, brown the ground meat with diced onion and minced garlic. Drain any excess fat.
  2. Transfer the mixture to a crockpot, adding diced tomatoes, tomato paste, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, stir in broken lasagna noodles.
  5. Mix in the ricotta cheese until well blended throughout the soup.
  6. Right before serving, sprinkle mozzarella cheese on top and let it melt. Garnish with fresh basil if desired.

Notes

For a vegetarian version, omit the meat and add more vegetables. For a thicker soup, reduce the broth.
