A heartwarming and comforting dish that combines the flavors of traditional lasagna into a delightful soup form, perfect for chilly evenings or busy weeknights.
Ingredients
- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 oz lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- In a skillet, brown the ground meat with the diced onion and minced garlic. Drain any excess fat.
- Transfer the mixture to a crockpot, then add the diced tomatoes, tomato paste, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the broken lasagna noodles.
- Mix in the ricotta cheese until well blended.
- Before serving, sprinkle mozzarella cheese on top and let it melt. Garnish with fresh basil if desired.
Notes
Browning the meat enhances flavor. Can be made vegetarian by omitting meat and adding more vegetables.
