Description

A vibrant and flavorful dish that captures the essence of Creole cooking, perfect for busy weeknights or gatherings.


Ingredients

  • 1 pound chicken breast, diced
  • 1 pound smoked sausage, sliced
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 1 cup celery, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 cups uncooked rice
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Green onions, for garnish


Instructions

  1. In your Crock Pot, combine the diced chicken, sliced sausage, diced onion, bell pepper, celery, minced garlic, diced tomatoes, chicken broth, uncooked rice, Cajun seasoning, salt, and pepper.
  2. Stir well to mix all the ingredients thoroughly.
  3. Cover the Crock Pot and cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender and the chicken is cooked through.
  4. Before serving, give it a good stir and top it off with some chopped green onions for an aromatic finish.

Notes

Allow the jambalaya to sit for about 30 minutes after cooking to enhance flavors. You can replace white rice with brown rice or cauliflower rice for a healthier option.
