Description

Ingredients

  • Rice noodles
  • Carrots, julienned
  • Cucumber, julienned
  • Bell peppers, thinly sliced
  • Fresh herbs (mint or cilantro)
  • Lettuce leaves
  • Soy sauce (for dipping)
  • Fresh lime juice


Instructions

  1. Gather all your vegetables and herbs, cutting them into thin strips.
  2. Soak the rice papers in warm water for 10-15 seconds until pliable.
  3. Lay the soaked rice paper flat and add approximately two tablespoons of your filling near one edge.
  4. Fold in the sides, then roll tightly to enclose the filling.
  5. Heat oil in a skillet over medium heat. Fry the spring rolls seam side down for about 2-3 minutes per side until golden brown.
  6. Serve hot with a side of soy sauce and a drizzle of fresh lime juice.

Notes

To reheat, place in a hot skillet with a little oil to regain crispiness. Avoid microwave to prevent sogginess.
