Ingredients
- Rice noodles
- Carrots, julienned
- Cucumber, julienned
- Bell peppers, thinly sliced
- Fresh herbs (mint or cilantro)
- Lettuce leaves
- Soy sauce (for dipping)
- Fresh lime juice
Instructions
- Gather all your vegetables and herbs, cutting them into thin strips.
- Soak the rice papers in warm water for 10-15 seconds until pliable.
- Lay the soaked rice paper flat and add approximately two tablespoons of your filling near one edge.
- Fold in the sides, then roll tightly to enclose the filling.
- Heat oil in a skillet over medium heat. Fry the spring rolls seam side down for about 2-3 minutes per side until golden brown.
- Serve hot with a side of soy sauce and a drizzle of fresh lime juice.
Notes
To reheat, place in a hot skillet with a little oil to regain crispiness. Avoid microwave to prevent sogginess.
