A quick and delicious recipe for perfectly crispy chicken breasts coated in panko breadcrumbs, seasoned to perfection.
Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 large egg
- 1 1/2 teaspoons fine sea salt, divided
- 1 teaspoon black pepper, divided
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 cup plain panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 teaspoon Cajun seasoning or Italian seasoning
- 1 teaspoon paprika
- 2 tablespoons extra virgin olive oil
- 1 tablespoon butter
Instructions
- Prep the chicken by filleting each breast into thinner cutlets and pounding for even cooking.
- Season the chicken with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
- Set up breading stations with flour mixture, egg mixture, and panko mixture.
- Coat each cutlet in the flour mixture, then dip it into the egg mixture, and finally press into the panko mixture.
- Heat a skillet over medium heat with olive oil and butter, then fry the chicken for 3-4 minutes per side until golden and cooked through.
- Remove from skillet and let rest on a wire rack to maintain crispiness.
Notes
Serve atop salad, with mashed potatoes, or as a chicken sandwich. Drizzle lemon for added brightness.
