Description

A quick and delicious recipe for perfectly crispy chicken breasts coated in panko breadcrumbs, seasoned to perfection.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1 1/2 teaspoons fine sea salt, divided
  • 1 teaspoon black pepper, divided
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 cup plain panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Cajun seasoning or Italian seasoning
  • 1 teaspoon paprika
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon butter


Instructions

  1. Prep the chicken by filleting each breast into thinner cutlets and pounding for even cooking.
  2. Season the chicken with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
  3. Set up breading stations with flour mixture, egg mixture, and panko mixture.
  4. Coat each cutlet in the flour mixture, then dip it into the egg mixture, and finally press into the panko mixture.
  5. Heat a skillet over medium heat with olive oil and butter, then fry the chicken for 3-4 minutes per side until golden and cooked through.
  6. Remove from skillet and let rest on a wire rack to maintain crispiness.

Notes

Serve atop salad, with mashed potatoes, or as a chicken sandwich. Drizzle lemon for added brightness.
