Ingredients
- Egg roll wrappers
- 1 bag cole slaw mix
- 1 teaspoon minced garlic
- 1/4 teaspoon ground ginger
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Cooking spray (olive oil or vegetable oil)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the cole slaw mix, minced garlic, ground ginger, soy sauce, salt, and pepper. Stir until well-mixed.
- Lay an egg roll wrapper on a clean surface, with one corner facing you. Add about 2 tablespoons of the filling in the center.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up tightly. Repeat until all wrappers are filled.
- Place the egg rolls seam-side down on a baking sheet lined with parchment paper. Spray the tops lightly with cooking spray.
- Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy, flipping halfway through.
Notes
Ensure that the egg rolls are tightly wrapped to prevent bursting during baking. Don’t overcrowd the baking sheet for even cooking.
