Description

Delightful, satisfying egg rolls with a crispy exterior and flavorful vegetable filling, perfect for any occasion.


Ingredients

  • Egg roll wrappers
  • 1 bag cole slaw mix
  • 1 teaspoon minced garlic
  • 1/4 teaspoon ground ginger
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Cooking spray (olive oil or vegetable oil)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the cole slaw mix, minced garlic, ground ginger, soy sauce, salt, and pepper. Stir until well-mixed.
  3. Lay an egg roll wrapper on a clean surface, with one corner facing you. Add about 2 tablespoons of the filling in the center.
  4. Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up tightly. Repeat until all wrappers are filled.
  5. Place the egg rolls seam-side down on a baking sheet lined with parchment paper. Spray the tops lightly with cooking spray.
  6. Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy, flipping halfway through.

Notes

Ensure that the egg rolls are tightly wrapped to prevent bursting during baking. Don’t overcrowd the baking sheet for even cooking.
