Description

Ingredients

  • 4 cod fillets (approximately 1.5 pounds total)
  • Salt and pepper, to taste
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 1 lemon, zested and juiced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 2 tablespoons olive oil
  • Cooking spray or extra olive oil for greasing


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat, lightly greased with cooking spray or olive oil.
  2. Pat the cod fillets dry with paper towels. Season both sides lightly with salt and pepper.
  3. In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, lemon zest, garlic powder, onion powder, and paprika.
  4. Drizzle olive oil over the breadcrumb mixture and toss until evenly coated and crumbly.
