Ingredients
- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 cup broccoli florets (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: Freshly ground black pepper and extra cheddar for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
- Stir in the minced garlic and garlic powder, allowing them to release their aroma for about a minute. Then, add in the orzo pasta, toasting it for another 1-2 minutes.
- Pour the broth into the pot and bring it to a boil. Once bubbling, reduce the heat to simmer. Toss in the broccoli florets, cover the pot, and cook for about 8-10 minutes, stirring occasionally until the orzo is tender.
- Off the heat, stir in the heavy cream and shredded cheddar cheese until everything is beautifully combined and creamy.
- Finish with a sprinkle of salt and pepper to taste. If desired, garnish with extra cheese and freshly ground black pepper. Serve warm and enjoy!
