Description

A quick and creamy chicken dish with a velvety cottage cheese-Parmesan sauce, perfect for weeknight dinners.


Ingredients

  • 1 lb chicken breast or chicken thighs, cubed
  • 1 cup cottage cheese
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon oil
  • Salt, to taste


Instructions

  1. Pat the cubed chicken dry and season with salt, paprika, and black pepper.
  2. Heat oil in a large skillet over medium heat until shimmering.
  3. Add the chicken pieces in a single layer and sear until the bottoms are golden, about 3–4 minutes.
  4. Flip the chicken pieces and continue to cook until golden and cooked through, about another 3–4 minutes.
  5. Reduce the heat to low and add the cottage cheese, stirring gently until warmed through.
  6. Gradually sprinkle in the grated Parmesan while stirring to ensure even melting.
  7. Taste and adjust seasoning with salt and pepper as necessary.
  8. Let the dish simmer on low for 2–3 minutes until the sauce thickens.
  9. Remove from heat and let it rest for one minute before serving.

Notes

For a silkier sauce, blend the cottage cheese before adding. Pairs well with rice, pasta, or a green salad.
