A quick and creamy chicken dish with a velvety cottage cheese-Parmesan sauce, perfect for weeknight dinners.
Ingredients
- 1 lb chicken breast or chicken thighs, cubed
- 1 cup cottage cheese
- 1/3 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 tablespoon oil
- Salt, to taste
Instructions
- Pat the cubed chicken dry and season with salt, paprika, and black pepper.
- Heat oil in a large skillet over medium heat until shimmering.
- Add the chicken pieces in a single layer and sear until the bottoms are golden, about 3–4 minutes.
- Flip the chicken pieces and continue to cook until golden and cooked through, about another 3–4 minutes.
- Reduce the heat to low and add the cottage cheese, stirring gently until warmed through.
- Gradually sprinkle in the grated Parmesan while stirring to ensure even melting.
- Taste and adjust seasoning with salt and pepper as necessary.
- Let the dish simmer on low for 2–3 minutes until the sauce thickens.
- Remove from heat and let it rest for one minute before serving.
Notes
For a silkier sauce, blend the cottage cheese before adding. Pairs well with rice, pasta, or a green salad.
