Description

Light, fluffy pancakes packed with protein, made quick and easy with a blender.


Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 1 cup rolled oats
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract (optional)
  • 1/2 teaspoon ground cinnamon
  • Salt to taste
  • Butter or oil for cooking


Instructions

  1. Add cottage cheese, rolled oats, eggs, baking powder, vanilla, cinnamon, and a pinch of salt to a blender.
  2. Blend until mostly smooth and pourable. If thick, add 1-2 tablespoons of milk or water.
  3. Preheat a non-stick skillet over medium heat and lightly coat with butter or oil.
  4. Pour about 1/4 cup batter per pancake onto the skillet.
  5. Cook until bubbles appear and edges look set, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
  6. Transfer to a plate and keep warm while cooking the remaining batter.
  7. Serve immediately with desired toppings.

Notes

For sweeter pancakes, add 1-2 tablespoons of maple syrup or honey to the batter. Resting the batter for 5-10 minutes helps to hydrate the oats.
