Description

Tender and customizable flatbreads made quick with cottage cheese, perfect for weeknight dinners or brunch.


Ingredients

  • 1 cup cottage cheese (full-fat preferred)
  • 1 cup all-purpose flour (substitute 1:1 gluten-free flour blend if needed)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp olive oil (plus extra for brushing)


Instructions

  1. Preheat the oven to 400°F (200°C). Position a rack in the center and line a baking sheet with parchment.
  2. In a bowl, combine cottage cheese, flour, baking powder, and salt. Stir until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface, divide into 4–6 portions, and press or roll each portion into a flat round about 1/8–1/4 inch thick.
  4. Place rounds on the prepared baking sheet. Brush with olive oil to promote browning.
  5. Add desired toppings such as salt, pepper, za’atar, herbs, and cheese.
  6. Bake for 15–20 minutes or until edges are golden. Cool on a rack for a few minutes before serving.

Notes

For a nuttier flavor, swap up to 1/4 cup of the flour with whole-wheat pastry flour. To keep the dough tender, avoid overworking it.
