Description

A comforting and hearty beef stew that transforms inexpensive cuts of meat into a luxurious dish through slow cooking.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons flour (optional)


Instructions

  1. Heat a large pot over medium-high heat and add vegetable oil.
  2. Pat the beef dry, season with salt and pepper, and brown in batches.
  3. Remove browned beef and set aside.
  4. Add onions and garlic to the pot, sautéing for 2-3 minutes.
  5. Return the beef to the pot and add broth, carrots, potatoes, thyme, bay leaf, and more seasoning.
  6. Bring to a gentle boil, then reduce heat and let simmer with a lid for 1.5 to 2 hours.
  7. For thicker stew, mix flour with cold water to make a slurry, stir into the pot, and cook 5-10 minutes.
  8. Remove bay leaf, taste, and adjust seasonings before serving.

Notes

For gluten-free, substitute the flour with cornstarch. Serve with crusty bread or over mashed potatoes.
