Description

A comforting one-pot wonder that combines the hearty flavors of chicken pot pie with the ease of pasta, perfect for busy weeknights.


Ingredients

  • 8 oz penne pasta
  • 1 lb cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1/2 cup shredded cheddar cheese (optional)


Instructions

  1. Cook the penne pasta according to package instructions, drain and set aside.
  2. In a large pot, combine cream of chicken soup, chicken broth, milk, garlic powder, onion powder, salt, pepper, and thyme. Stir until well mixed and heated through.
  3. Add the shredded chicken and frozen mixed vegetables, cooking until heated through, about 5 minutes.
  4. Stir in the cooked pasta until all components are evenly combined.
  5. If using cheddar cheese, sprinkle it on top before serving.
