Description

A delightful banana bread swirled with cinnamon, perfect for breakfast or a midday snack, that brings comfort and nostalgia with every bite.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • A pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, thoroughly combine the mashed bananas and melted butter.
  3. Stir in the baking soda along with a pinch of salt until well mixed.
  4. Add in the sugar, beaten egg, and vanilla extract, stirring until all ingredients blend perfectly.
  5. Gently fold in the flour until just combined; be careful not to overmix.
  6. In a separate bowl, combine the ground cinnamon and brown sugar.
  7. Pour half of the banana batter into the prepared loaf pan and sprinkle half of the cinnamon-sugar mixture on top.
  8. Layer the remaining batter over the cinnamon-sugar mix, then finish with the rest of the cinnamon-sugar on top.
  9. Use a knife to swirl the mixture gently.
  10. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm with a pat of butter or a drizzle of honey. For an indulgent breakfast, toast slices and top them with cream cheese.
