Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, thoroughly combine the mashed bananas and melted butter.
- Stir in the baking soda along with a pinch of salt until well mixed.
- Add in the sugar, beaten egg, and vanilla extract, stirring until all ingredients blend perfectly.
- Gently fold in the flour until just combined; be careful not to overmix.
- In a separate bowl, combine the ground cinnamon and brown sugar.
- Pour half of the banana batter into the prepared loaf pan and sprinkle half of the cinnamon-sugar mixture on top.
- Layer the remaining batter over the cinnamon-sugar mix, then finish with the rest of the cinnamon-sugar on top.
- Use a knife to swirl the mixture gently.
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve warm with a pat of butter or a drizzle of honey. For an indulgent breakfast, toast slices and top them with cream cheese.
