Description

Delightful and nutritious mini bites combining cottage cheese and oats with the sweetness of apples. Perfect for a quick breakfast or healthy snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini muffin liners.
  2. In a mixing bowl, combine the cottage cheese, rolled oats, applesauce (or grated apple), egg, cinnamon, honey (or maple syrup), baking powder, and salt. Stir until everything is well mixed.
  3. Let the batter sit for about 5 minutes.
  4. Scoop the mixture into the mini muffin pan, filling each cup nearly to the top.
  5. Bake for 18–20 minutes, or until the bites are set and golden brown on top.
  6. Once baked, let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These bites can be enjoyed warm or cooled, and are great with yogurt and fresh fruit.
