Delightful and nutritious mini bites combining cottage cheese and oats with the sweetness of apples. Perfect for a quick breakfast or healthy snack.
Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini muffin liners.
- In a mixing bowl, combine the cottage cheese, rolled oats, applesauce (or grated apple), egg, cinnamon, honey (or maple syrup), baking powder, and salt. Stir until everything is well mixed.
- Let the batter sit for about 5 minutes.
- Scoop the mixture into the mini muffin pan, filling each cup nearly to the top.
- Bake for 18–20 minutes, or until the bites are set and golden brown on top.
- Once baked, let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
These bites can be enjoyed warm or cooled, and are great with yogurt and fresh fruit.
