Ingredients
- 2 cups cooked chicken, shredded
- 1 cup salsa (your favorite kind)
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- Salt and pepper, to taste
Instructions
- In a crockpot, combine the shredded chicken and salsa.
- Add the black beans and corn to the mixture.
- Cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours).
- Once cooked, serve in bowls and top with diced avocado and a simple cilantro lime dressing (mix cilantro and lime juice).
- Season with salt and pepper to taste.
