Description

A flavorful and satisfying Chicken Burrito Bowl made with tender shredded chicken, zesty salsa, and customizable toppings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa (your favorite kind)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • Salt and pepper, to taste


Instructions

  1. In a crockpot, combine the shredded chicken and salsa.
  2. Add the black beans and corn to the mixture.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, serve in bowls and top with diced avocado and a simple cilantro lime dressing (mix cilantro and lime juice).
  5. Season with salt and pepper to taste.

Feel free to swap ingredients based on your preferences, such as using a spicier salsa or adding jalapeños. Shred your chicken while it’s warm for easier handling, and consider using rotisserie chicken to save time.
