Delicious Cheesy Potato Burritos filled with crispy tater tots, savory ground beef, and gooey cheese, perfect for cozy dinners or gatherings.
Ingredients
- 1 pound ground beef (or ground turkey/plant-based alternative)
- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup Taco Bell chipotle sauce (or any chipotle mayo/sauce)
- 6 large flour tortilla wraps
- Salt and pepper to taste
Instructions
- Preheat your oven to the temperature recommended on the tater tots package and bake them until they’re golden and crispy.
- While the tater tots are baking, heat a skillet over medium heat. Add your ground meat, seasoning it with salt and pepper. Cook until there’s no pink left, breaking it up as it cooks. Drain any excess grease.
- In a large bowl, combine the cooked beef, slightly crushed tater tots, cheddar cheese, and Monterey Jack cheese. Toss everything gently to mix.
- Warm your flour tortillas in a dry skillet or microwave until pliable.
- Spoon a generous portion of the filling down the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream.
- Fold in the sides of the tortilla and roll tightly to form burritos. Place them seam-side down in a baking dish.
- Sprinkle extra cheese on top and bake in the oven for 5-7 minutes until the cheese is melted and bubbly.
- Garnish with diced tomatoes, green onions, and cilantro, if desired. Serve hot with more sour cream and chipotle sauce for dipping.
