Description
A comforting casserole made with layers of ground beef, thinly sliced russet potatoes, creamy sauce, and topped with melted cheese.
Ingredients
- 1 ½ lbs ground beef (or ground turkey)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 5 – 6 medium russet potatoes (thinly sliced, about 1/8 inch)
- 2 cups shredded cheddar cheese (divided)
- 1 cup shredded mozzarella (optional)
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1 cup milk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil or butter (for greasing the dish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil or butter.
- In a skillet, brown the ground beef with the chopped onion until fully cooked, then drain any excess fat. Add in the minced garlic, salt, pepper, and paprika for flavor.
- In a separate bowl, whisk together the cream of mushroom soup and the milk until smooth.
- Start layering: Place half of the sliced potatoes at the bottom of your greased baking dish.
- Spread half of the beef mixture over the potatoes, followed by half of the sauce. Top with 1 cup of shredded cheddar cheese.
- Repeat the layers with the remaining potatoes, beef mixture, sauce, and finish with the rest of the cheddar and mozzarella if using.
- Cover with foil and bake for 45 minutes. Remove the foil and bake uncovered for an additional 15–20 minutes, until the potatoes are tender and the cheese is bubbly and golden.
- Allow it to rest for about 5 minutes before serving.
Notes
Pairs well with a green salad or steamed vegetables. You can freeze portions for longer storage.
