Description

Crispy, cheesy taquitos packed with flavorful ground beef and zesty salsa, perfect for weeknight dinners or game day snacking.

Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 8-10 flour or corn tortillas
  • Cooking spray or oil for crisping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Stir in the salsa and half of the shredded cheese until well combined.
  4. On each tortilla, place a generous spoonful of the beef mixture and roll tightly.
  5. Arrange the rolled taquitos seam side down on a baking sheet.
  6. Lightly spray or brush them with cooking oil to promote crispiness.
  7. Bake in the preheated oven for 15-20 minutes until golden and crispy.
  8. Remove from the oven and top with the remaining cheese. Serve warm with extra salsa on the side for dipping!

Notes

For an extra kick, consider adding diced jalapeños. Leftovers can be stored in an airtight container for up to three days.
