Description

A hearty soup that brings the classic flavors of stuffed cabbage rolls in an easy-to-make one-pot dish.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chopped cabbage
  • 1 cup diced tomatoes (fresh or canned)
  • 4 cups beef broth (or vegetable broth for a lighter version)
  • 1 cup carrots, diced
  • 1 cup bell peppers, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. In a large Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
  3. Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain any excess fat if needed.
  4. Stir in the chopped cabbage, diced tomatoes, carrots, and bell peppers.
  5. Pour in the beef broth and season with oregano, paprika, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
  7. Adjust seasoning according to your taste and serve hot.

For a lighter option, substitute ground turkey or chicken, or use vegetable broth for a vegetarian-friendly version.
