A hearty soup that brings the classic flavors of stuffed cabbage rolls in an easy-to-make one-pot dish.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chopped cabbage
- 1 cup diced tomatoes (fresh or canned)
- 4 cups beef broth (or vegetable broth for a lighter version)
- 1 cup carrots, diced
- 1 cup bell peppers, chopped
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
- Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain any excess fat if needed.
- Stir in the chopped cabbage, diced tomatoes, carrots, and bell peppers.
- Pour in the beef broth and season with oregano, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
- Adjust seasoning according to your taste and serve hot.
Notes
For a lighter option, substitute ground turkey or chicken, or use vegetable broth for a vegetarian-friendly version.
