Description

A warm, slightly custardy breakfast bake using cottage cheese, eggs, oats, and sweet blueberries, perfect for brunch or meal prep.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup oat flour
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh or frozen blueberries
  • Pinch of salt
  • Butter or oil, for greasing the baking dish


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a small baking dish.
  2. In a mixing bowl, whisk the cottage cheese, eggs, maple syrup (or honey), vanilla, and cinnamon until mostly smooth.
  3. Stir in the oat flour, baking powder, and a pinch of salt until combined.
  4. Gently fold in the blueberries.
  5. Pour the mixture into the prepared dish and smooth the top.
  6. Bake for 30-35 minutes or until set and golden.
  7. Remove from the oven and let cool for 10-15 minutes before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven or microwave.
