Ingredients
- 32 oz waxy potatoes (about 4 large potatoes)
- 1½ teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Sea salt and freshly ground black pepper
- Low-fat cooking spray or 2 tablespoons olive oil
Instructions

- Wash the potatoes thoroughly to remove any dirt, patting them dry with paper towels.
- In a small bowl, mix together the paprika, garlic powder, and onion powder for your spice blend.
- Cut the potatoes in half lengthwise, then cut each half lengthwise again to create eight wedges per potato.
- Place the wedges in a large mixing bowl, spray with cooking spray or drizzle with olive oil, and toss with the spice mix to coat.
- Season with salt and black pepper to taste.
- Spread the wedges in a single layer on a baking sheet lined with non-stick foil.
- Bake for 35 to 40 minutes, or until golden and cooked through.
- Once out of the oven, season with additional salt if desired.
Notes
Waxy potatoes like Yukon Gold or red-skinned varieties work best for this recipe. For consistent cooking, cut all wedges to a similar size and spread in a single layer.
