Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained
- 1 cup corn kernels
- 6 corn tortillas, cut into strips
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1/2 cup sour cream (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground beef over medium heat and drain excess fat.
- Stir in taco seasoning, black beans, and corn. Cook for about 2 minutes.
- In a baking dish, layer half of the tortilla strips, half of the beef mixture, a layer of salsa, and a layer of cheddar cheese.
- Repeat layering with remaining ingredients.
- Bake for 20 minutes until cheese is melted and bubbly.
- Serve hot topped with a dollop of sour cream.
