Description

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 6 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup sour cream (for serving)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat and drain excess fat.
  3. Stir in taco seasoning, black beans, and corn. Cook for about 2 minutes.
  4. In a baking dish, layer half of the tortilla strips, half of the beef mixture, a layer of salsa, and a layer of cheddar cheese.
  5. Repeat layering with remaining ingredients.
  6. Bake for 20 minutes until cheese is melted and bubbly.
  7. Serve hot topped with a dollop of sour cream.
