Description

A comforting beef stew filled with tender meat and hearty vegetables, perfect for cold days.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 medium potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the beef pieces and brown them on all sides.
  3. Transfer the browned beef to a slow cooker.
  4. Add the diced potatoes, sliced carrots, chopped onion, minced garlic, tomato paste, thyme, salt, and black pepper to the slow cooker.
  5. Pour the beef broth over the mixture.
  6. Cover and cook on low for 8 hours, or until the beef is tender.
  7. Just before serving, give it a good stir and enjoy your hearty beef stew!

Notes

For deeper flavor, brown the beef in batches. Adjust vegetables based on preference.
