A comforting beef stew filled with tender meat and hearty vegetables, perfect for cold days.
Ingredients
- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the beef pieces and brown them on all sides.
- Transfer the browned beef to a slow cooker.
- Add the diced potatoes, sliced carrots, chopped onion, minced garlic, tomato paste, thyme, salt, and black pepper to the slow cooker.
- Pour the beef broth over the mixture.
- Cover and cook on low for 8 hours, or until the beef is tender.
- Just before serving, give it a good stir and enjoy your hearty beef stew!
Notes
For deeper flavor, brown the beef in batches. Adjust vegetables based on preference.
