Description

A vibrant and flavorful fried rice dish combining tender chicken, colorful vegetables, and an irresistible bang bang sauce, perfect for busy weeknights.


Ingredients

  • 1 cup cooked rice (day-old works best)
  • 1 lb chicken breast, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons soy sauce
  • 2 tablespoons bang bang sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pan or wok, heat the sesame oil over medium heat.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Once the chicken is cooked, push it to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  4. Mix the chicken and eggs together in the pan.
  5. Stir in the mixed vegetables and cook for 2-3 minutes until they are heated through.
  6. Add the cooked rice and soy sauce, stirring until everything is well combined.
  7. Drizzle with bang bang sauce and toss to coat the ingredients nicely.
  8. Season with salt and pepper to taste, then serve hot, garnished with chopped green onions.

Notes

For optimal flavor, use day-old rice. Modify the amount of bang bang sauce to adjust spice levels.
