Description

A vibrant and flavorful dish that combines tender chicken, colorful vegetables, and the irresistible kick of bang bang sauce, perfect for busy weeknights or quick family dinners.


Ingredients

  • 1 cup cooked rice (day-old works best)
  • 1 lb chicken breast, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons soy sauce
  • 2 tablespoons bang bang sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pan or wok, heat the sesame oil over medium heat.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Push the chicken to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  4. Mix the chicken and eggs together in the pan.
  5. Stir in the mixed vegetables and cook for 2-3 minutes until heated through.
  6. Add the cooked rice and soy sauce, stirring until well combined.
  7. Drizzle with bang bang sauce and toss to coat the ingredients.
  8. Season with salt and pepper to taste, then serve hot, garnished with chopped green onions.

Notes

For optimal flavor, use day-old rice. The sesame oil adds depth of flavor that’s essential to the dish.
