Ingredients
- 1 cup cooked rice (day-old works best)
- 1 lb chicken breast, diced
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 tablespoons soy sauce
- 2 tablespoons bang bang sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pan or wok, heat the sesame oil over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Push the chicken to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
- Mix the chicken and eggs together in the pan.
- Stir in the mixed vegetables and cook for 2-3 minutes until heated through.
- Add the cooked rice and soy sauce, stirring until well combined.
- Drizzle with bang bang sauce and toss to coat the ingredients.
- Season with salt and pepper to taste, then serve hot, garnished with chopped green onions.
Notes
For optimal flavor, use day-old rice. The sesame oil adds depth of flavor that’s essential to the dish.
