Description

A warm, custardy bake combining apples and cinnamon with protein-rich cottage cheese, perfect for brunch or dessert.


Ingredients

  • 2 cups cottage cheese
  • 3 large eggs
  • 1 large apple, peeled and finely diced
  • 1/2 cup rolled oats or 1/2 cup almond flour
  • 1/4 cup maple syrup or honey
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Nonstick spray or butter for greasing


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), and vanilla until fairly uniform.
  3. Stir in the oats (or almond flour), cinnamon, and baking powder until just combined.
  4. Fold in the finely diced apple.
  5. Pour the batter into the prepared baking dish and spread it into an even layer.
  6. Bake for 35–40 minutes, or until the top is golden and a toothpick comes out clean.
  7. Let cool for 10–15 minutes before slicing. Serve warm or at room temperature.

Notes

For a smoother bake, blend the cottage cheese briefly before mixing. Oats provide chewiness, while almond flour creates a denser texture.
