A warm, custardy bake combining apples and cinnamon with protein-rich cottage cheese, perfect for brunch or dessert.
Ingredients
- 2 cups cottage cheese
- 3 large eggs
- 1 large apple, peeled and finely diced
- 1/2 cup rolled oats or 1/2 cup almond flour
- 1/4 cup maple syrup or honey
- 1 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
- Nonstick spray or butter for greasing
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), and vanilla until fairly uniform.
- Stir in the oats (or almond flour), cinnamon, and baking powder until just combined.
- Fold in the finely diced apple.
- Pour the batter into the prepared baking dish and spread it into an even layer.
- Bake for 35–40 minutes, or until the top is golden and a toothpick comes out clean.
- Let cool for 10–15 minutes before slicing. Serve warm or at room temperature.
Notes
For a smoother bake, blend the cottage cheese briefly before mixing. Oats provide chewiness, while almond flour creates a denser texture.
